Deal with sharp grooves

I want to know how to deal with deep and sharp grooves. Like inside the bottom of a "V". Is it possible to place a seam here using tig welding? The Electrode needs to be extended quite a lot, and due to the surfaces besides coming closer, the arc tends to not hit the ground but hit the legs of the "V".
Maybe the electrode can be isolated with some not conducting but heat resistant stuff? maybe a little ceramic pipe?

high speed pulse like around 400 pps along with an addition of helium to the argon will focus the arc more and should help
